In a country, where the wine production counts more than thousands of years, the first Georgian wine brandy appears only in 19th century and is connected to David Sarajishvili name. David Sarajishvili’s biggest will and tireless effort resulted in creating the first Georgian wine brandy. Exactly this person established the first classic brandy making technology in Georgia and produced the cognac accordingly. The company was launched in 1884 and in about three years in 1887 - produced the first product.

For producing the wine brandy, “Sarajishvili” always used classical technology - aging spirits in oak barrels. After France, Georgia became the first country in the Russian Empire that started to produce wine brandy and officially called it "Cognac".

Georgian brandy was awarded with gold medals at Paris, Brussels and Chicago international exhibitions.

During the communist period, the brandy factory became the government property and was named as “Tbilisi Brandy Factory.”

During this period, the factory was built, and it was here that the stock of unique spirits distilled in different regions of Georgia was gathered. Among them, the oldest were distilled in 1893–1905 under the direct leadership of David Sarajishvili.

1994

The company became the private property again, and regained the name “Sarajishvili”.

In 2018, to celebrate the 100th anniversary of Georgia's independence, a special limited-edition beverage, “Independence,” was created using unique spirit from 1918. 

Only a symbolic quantity of 1918 bottles was released, each with a unique number and engraving.

It’s been more than a century since “Sarajishvili” started to produce the excellent wine brandy. The secret of our success lies in a vine. David Sarajishvili has spent pretty much time to study and research   Georgian vine spices and finally found the most appropriate for wine brandy – Tsiska, Tsolikauri, Goruli Mtsvane, Chinuri, and Rkatsiteli.

Creating wine brandy is a complicated process, requiring right technology and creative intervention.  Company “Sarajishvili” pays big attention to proper harvest time. Our wine is made according to European technology and is moderately sweet and sour, with neutral fruit flavor. The right time of distillation helps us to take the leading position in the local market.

Using classical technology while producing is one of the advantages of “Sarajishvili ”. Distillation of spiritsis highly important step in making wine brandy. “Sarajishvili” is the only company in Georgia, which uses French Charente distillation machine for creating the high-quality spirits.

Aging of spirits is highly responsible process in brandy production. Being as one of the oldest companies, “Sarajishvili” follows only traditional methods of aging. Our spirits are stored in 350-400 litter oak barrels at least for three years. Young brandy spirit extracts substances from the oak timber and after being oxidized it gets unique taste and aroma. When cognac gets into reaction with an oak barrel and air, approximately 3 % of spirits evaporates. The evaporated spirit is called as the “share of angels”.

blending

Blending is the very important creative process. A person involved in blending has to follow his intuition and taste in order to create an unforgettable blend with stable, smooth taste.  “Sarajishvili” succeeds in creating rich and interesting compositions thanks to the unique collection of old and manifold spirits preserved in the company’s reserves.

ASSIMILATION

The accomplishing stage of brandy production is resting of the blend. At “Sarajishvili ” this process takes place exclusively in oak barrels and lasts from 4 to 12 months. At this stage of producing components of wine brandy harmonically blend with each other and are transformed into a unique drink.

Spirits distilled in the same year but from different origins clearly reflect the natural characteristics of their regions. The most outstanding part of the collection is the oldest reserves — spirits created in 1893 and 1905 under the supervision of David Sarajishvili himself.

TECHNOLOGY

Method-Technology That Creates Sarajishvili's Quality

David Sarajishvili knew well that creating a high-quality brandy begins with the correct selection of grape varieties. That is why, before starting, he thoroughly studied local varieties and eventually selected six of them, which met his main requirement — naturally high acidity.

The Advantage of Georgian Varieties

The Georgian vine varieties selected for "Sarajishvili" are unique. Unlike European ones, they are simultaneously characterized by both high acidity and high sugar content, which creates a rarely encountered natural balance for brandy.

Natural Purity and the Role of Oak

Our wine brand is naturally clarified — it is not filtered in order to preserve aromatic components.
In the aging process, oak barrels are given special importance:

  • Only oak wood contains lignin – a substance that, in reaction with alcohol, produces unique aromas;

  • The porous structure of oak allows the liquid constant contact with oxygen;

  • This is how the brandy becomes “softened” and the taste is deepened.

Original Distillation Method

Sarajishvili’s technological advantage is largely based on a specially developed process that we use during distillation with Charentais-type alembics.

How does our method work?


We extract part of the third fraction of the distillation, which is rich in natural aromatic substances (such as phenylethyl alcohol and enanthic components);
This aromatic layer is added back into the wine to be distilled, significantly improving the final spirit’s quality.

The remaining so-called “aromatic waters”:

  • Are collected separately, from a specific alcohol content range;

  • Are aged 4–6 months in old oak barrels;

  • During this time, the liquid becomes “ennobled” and is later added to 3–5-year-old brandy blends.

As a result, we get a young wine brandy that already possesses richness, softness, and aromatic depth — unlike other brandies in the same age category.

In the production of both ‘’Sarajishvili’s’’ classic and unique lines, only the distillation method using Charentais-type alembics is used, which ensures the brandy's highest quality and refined aromatic characteristics.
